Why does popcorn pop?
Most of the inside of a kernel is composed of starch, which is a storage carbohydrate, or fuel. Starch has a large water holding capacity.
When you heat popcorn, the water that is in the starchy inside part of the kernel becomes a vapor and bursts through the hard part of the kernel.
In order for this to happen successfully and dependably, the kernel must be relatively small, and the hard, outer shell of the kernel must be quite strong to resist the building pressure.
This is why popcorn produces grains that are smaller than most field corn.
How were corn flakes invented?
Corn flakes were invented in 1894 by Dr. John Harvey Kellogg, head of the Battle Creek Sanitarium, and his more enterprenurial brother William Keith.
The doctor was a Seventh Day Adventist who imposed a strict vegetarian diet on his patients, and he and his brother put special effort into making the diet palatable. They tried a new recipe and baked some boiled wheat on a baking tin. The doctor was called away on an emergency, and they rolled out the stuff the next day. The boiled wheat had turned into flakes. They tried it with corn, too. William Keith realized that there were commercial opportunities here. He tinkered with the recipe, and added sugar, malt and other additives to the corn flakes. He bought out his brother, and started the Battle Creek Toasted Corn Flake Company in 1906.
What is the difference between corn and maize?
The two words have completely different origins, but they refer to the same plant.
The root of “corn” comes from the Germanic ‘Korn’ which means a cereal grain. It can be any grain, but English speakers refer it to the corn plant as we know.
The root of “maize” comes from the Tahin people who lived near San Salvador, where Columbus landed. The island was populated by Tahino people, in whose language the name for their staple crop was “mahis.” The name meant “sourceof life.”
